Lentil Soup
Hearty and nutritious, this lentil soup is packed with plant-based protein and vegetables. Simmered in a flavorful broth with spices and herbs, it’s a warming, satisfying meal that’s perfect for chilly days or as a healthy weeknight dinner.
Ingredient
1 cup red lentils, 1 onion (chopped), 1 carrot (diced), 2 garlic cloves (minced), 1 tsp cumin, 1 tsp turmeric, 4 cups vegetable broth, salt, pepper
Method
- Heat oil in a pot over medium heat. Add the onion, carrot, and garlic, and cook for 5 minutes until softened.
Stir in the cumin and turmeric, and cook for 1 minute.
Add the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the lentils are soft.
Season with salt and pepper. Serve hot.
